The easiest and crispiest recipe ever for Oven Roasted Red Potatoes! The red potatoes are loaded with so much flavor they will become your next addiction!

If you aren't already excited by the look of those beauties, then who are you? In my opinion, roasted red potatoes must be one of the best side dishes. And one of the best things about this recipe is that you can easily use it for breakfast, lunch or dinner. These are quick to make, full of flavor, and super healthy, making them an excellent addition to any meal. Your friends and family will always ask you to make these quick roasted red potatoes if they are anything like mine.

I'm sure we can all agree that potatoes are one of those classic side dishes that just complete any meal. Whether it's roasted red potatoes, sweet potatoes, mashed potatoes or potato salad, anything goes! And let's be honest, have you ever met someone who didn’t like potatoes? I know I haven't! Potatoes are versatile, tasty, and easy to prepare.

These crispy oven roasted Parmesan red potatoes will also add variety to your plate, with various tasty herbs, and served at a variety of times. They are so good, they will easily shoot to the top of your list of side dishes to prepare.

Roasted Crispy Parmesan Red Potatoes Ingredients?

The recipe for these crispy roasted potatoes doesn't require much to make them taste amazing, which is one of the reasons I use it so often. Here is what you’ll need to make these crispy Parmesan roasted red potatoes:

  • Small bag of red potatoes (halved)

  • Olive or avocado oil

  • Paprika

  • Garlic

  • Salt

  • Cracked blacked pepper

  • Italian Seasoning

  • Parsley (fresh or dried)

  • Grated Parmesan

What are the best potatoes?

Ultimately, it comes down to what kind you like or have available. I personally, love red potatoes or will get a mixed bag of baby potatoes. They are easily cut in half and used for this recipe. If you want to, pick up your favorite potato (red, Yukon, Russel) and cut it into 1" cubes. Make your cubes uniform in size so they cook evenly.

How do you prepare the roasted Parmesan red potatoes?

To make these oven roasted potatoes, place the halved red potatoes in a bowl and drizzle with olive oil. Generously coat the potatoes with the dry rub and mix. Mix in the parsley, Italian seasoning, and Parmesan cheese after the potatoes have been thoroughly coated. Once complete, place them on a baking sheet and place them in a preheated oven at 425°.

Can you prepare extra roasted Parmesan red potatoes for later in the week?

Abso-freaking-lutely!!! One of my favorite thing to do is take leftover potatoes and serve them with my breakfast the next morning. These are perfect to have with friend eggs or be made into a breakfast hash. Or you can add them to meal prep containers to have them throughout the week. I have found they are still good for 3 to 4 days after cooked.

Are there any crispy Parmesan red potato tips?

I cannot stress this enough but do not crowd the potatoes on the tray so that steam has room to escape! Orient the potatoes so that the skin side faces up, as this is the side that will get crispy from the oil and heat of the tray.

What to serve the crispy Parmesan red potatoes?

Crispy Parmesan Red Potatoes

1.5 lbs small bag of red potatoes (halved)

½ tbsp olive or avocado oil

½ tbsp paprika

¼ tsp garlic

¼ tsp salt

¼ tsp cracked blacked pepper

¼ tsp Italian Seasoning

½ tbsp parsley

2 tbsp grated Parmesan

Directions: Preheat oven to 425°. In a small bowl, add in paprika, salt, and pepper. Place halved potatoes in a large bowl and top with oil. Generously coat the potatoes with the dry rub and mix. Mix in the parsley, Italian seasoning, and parmesan cheese after the potatoes have been thoroughly coated. On a baking sheet, add a piece of aluminum foil and spray with nonstick. Even place potatoes on the baking sheet and put in the oven. Cook for 35-40 minutes.
