The perfect peanut butter chocolate chip chaffles that comes to life!



When you think to yourself about perfect combinations of flavors, I often think of peanut butter and chocolate. According to my survey of my Instagram followers, my healthy peanut butter chocolate chip chaffle recipe always takes the top spot. If you've been following me for even a short time, you know that I love waffles!


As with my other healthy chaffle recipes, these will deliver the flavors you crave, without all the extra calories, carbs, or even gluten, which makes this recipe perfect for those on a ketogenic, low carb, or gluten free diet. Why? Simply because these are made with a base of egg, almond flour, shredded mozzarella cheese and spices. I know it sounds strange, but trust me, you'll love this healthy chaffle recipe right away.


Let's face it, who doesn't want to eat a healthy chaffle topped with peanut butter and chocolate chips? I couldn't imagine a more perfect way to end the weekend than with a delicious and healthy brunch.


So instead of belaboring this, let's get making these healthy peanut butter chocolate chip chaffles!


Ingredient List:


Healthy Peanut Butter Chocolate Chip Chaffle


1 Large Egg

½ Cup Finely Shredded Mozzarella

¼ Cup Almond Flour (28g)

1 Tbsp Natural Peanut Butter or Nuts N' More High Protein Peanut Butter Spread

1 Tsp Vanilla Extract

3 Tbsp Swerve Confectioners Sweetener (you can use powdered sugar)

½ Baking Powder


Directions: Take half a cup of mozzarella and put it on a cutting board, finely dice and add back to a mixing bowl. Add the remainder of the ingredients and thoroughly mix. Heat a small waffle maker and add batter. Cook for about 2 minutes, open the lid and allow for another 15 seconds of cooking. Use a fork to remove the waffle from the waffle iron.
