Chocolate doesn't talk back, chocolate understands!

Mouth watering healthy peanut butter chocolate chip chia seed parfait!


Let's face it, whether you are dieting, working to improve your health or just a foodie like me, then chocolate and peanut butter are at the forefront of your foods you enjoy. And why wouldn't it be? Chocolate and peanut butter are the perfect combo and provide that satisfying craving.


Luckily in the Lemon Kitchen, I am always looking at ways to bring healthy recipes to your table that incorporate all kinds of flavors, but particularly, chocolate and peanut butter... mostly because I love the combo. And whats the best thing about this recipe? Well a few things. First, it is super high in protein and fiber, so it will keep you full for a very long time. Second, it's very healthy and relatively low in overall calories. Third, it's a meal that is just loaded with nutrients that can improve your health such as proteins, healthy fats, vitamins, minerals and antioxidants. And lastly, one of the best things about this recipe, is that it can support ketogenic, low carb or gluten free diets (depending on the protein powder).


So instead of belaboring this, let's get making the healthy peanut butter chocolate chip chia parfait!


Healthy Peanut Butter Chocolate Chip Chia Parfait Ingredients:


6 oz Almond or other nut milk

120g of Plain Greek Yogurt (I prefer Two Good)

1 ½ scoops of protein powder (PEScience is my favorites)

2 tbsp or 30g chia seeds

1 tbsp sweetener

1 tbsp unsweetened cocoa powder (optional)

1 tbsp natural peanut butter or nuts n’ more high protein peanut butter


Directions: In a bowl, thoroughly mix milk and chia seeds. Then add and thoroughly mix in protein powder, sweetener and cocoa powder. Follow this by adding in the Greek yogurt. Once all mixed together, put in the refrigerator overnight or at least 2 hours. Take out of the refrigerator, top with Lily’s Chocolate Chips, a quest or lily’s peanut butter cup and drizzle with some natural peanut butter or nuts n’ more peanut butter.

Fats: 35.6g

Carbs: 34g

Fiber: 20.6g
